There is evidence from archaeological finds that cheese has been in existence since prehistoric times.

 

There are hundreds of different types of cheeses. However they are mainly differentiated by the type of milk used to make them (standard, skimmed or pasteurised) and by the animal from which the milk is sourced (cow, goat, sheep, buffalo, horse or camel). Changes in pasture, the weather and seasonality are just some of the factors which will all influence the art of cheese making, so that each cheese you buy will be subtly different.
